Paulette Macaroons - Caribbean Chocolate


I have a thing for pastries and baked goods: sweet or savoury, I'm there. My uncle ran Arnold's Pastry, a popular 80s patisserie shoppe located on upper Frederick St. in Trinidad, and I remember oh so many days just drooling over the sights and smells of the glazed, flaky goodies in the display windows.

I came across these macaroons online and felt that very pastry rush come right back to me. Paulette Macaroons - aka fancy french cookies - are touted as THE BEST macaroons on the West coast of the US. They're made in the authentic French manner, under the knowing eyes of the Award-winning French chef Christophe Michalak and pastry lover, Paulette Koumetz.

The charm of their offerings? Their 'classic' selection of 'Caribbean Chocolate' macaroons! Its a fairly 'fancy-pants' setup, where LA dwellers can order their batches of macaroons online, and go to the store for a pickup. And as with any 'fancy-pants' scenario, there are rules and instructions for eating said macaroon: pop them in the fridge, and bring them to room temp before serving...
